I used to work in an Italian restaurant and there was a guy from Italy who worked there and they had a traditional brick oven, with a stone base and he made me a pizza one dinner break. It was the best pizza i have ever eaten in my life and i have tried to recreate it and have only ever got close. He used his own recipe and would not tell me anything. I have found the flour, mozzarella, topping choices, rough amounts, but i cant find the right yeast!!

I would love the pizza crust not to hard and not too soft, like they have at little caesars or domino’s or pizza hut or any of the pizza places. My recipe is:
3 cups all purpose flour
1 tsp salt
2 tsp yeast mixed with 1 tsp sugar until bubbling
1 1/2 cups warm water
1/4 cup extra virgin olive oil.

What am I doing wrong?
It’s not brick hard but hard to the point where it is veryyy chewy.
